Waverley Hills is situated between Tulbagh and Ceres, near Wolseley, nestled at the foot of the striking Witzenberg Mountain Range in South Africa. The estate lies on fertile yellow clay soils interspersed with river stones, ensuring well-drained terrain with exceptional water retention. Located on a natural watershed, the vineyards benefit from pure spring water irrigation and thrive amidst a landscape rich in fynbos vegetation. This indigenous flora lends a distinctive herbaceous character to the wines, reflecting the unique terroir of the region.
Committed to environmental stewardship, Waverley Hills practices organic farming with a focus on sustainability and biodiversity. Cover crops such as vetch and legumes improve soil health and attract beneficial insects, while sections of indigenous vegetation are left to grow freely, fostering a natural habitat for local fauna. As a recognised WWF Conservation Champion, Waverley Hills has set aside approximately 20% of its land - including critically endangered veld types - for conservation. The estate uses compost and natural manures, controls pests with natural predators, and even relies on a flock of white ducks to manage snails, ensuring an eco-friendly ecosystem.
Wine Tasting
Waverley Hills is celebrated for its organic wines, known for their smooth textures, soft ripe tannins, and robust garrigue-like (fynbos) aromas. The estate also produces olives in brine, dried olives, and a small quantity of olive oil. Tastings take place in an elevated cellar that boasts spectacular panoramic views across the valley and mountain ranges, snow-capped in winter and vivid in summer. Visitors are invited to experience these wines in a peaceful, natural setting that embodies harmony with nature. Waverley Hills forms part of the Tulbagh Wine Route.

Large foldback glass doors open onto the landscape, creating a seamless indoor-outdoor experience. A large fireplace warms the venue in winter, while in summer, the air-conditioned space extends onto a balcony overlooking the valley and mountains.
